Set Dosa

Set Dosa
The other day, had been to one of the south Indian restaurants and came across this item in their menu card, which looked different and yummy. With the first byte and from the aroma only I realized that this is something I have had at one of my good friends house quite some time back and had loved it then.
I immediately asked the waiter if I can get the recipe, he just smiled at me and walked away only to return after some time with the ingredients that's been used to prepare the delicious set dosa.

I prepared it today for breakfast and I must say it turned to be really good. The aroma of the dosa was so inviting that my son wanted to have one before leaving for school which otherwise never happens.
 So here it goes.

Ingredients                                               Quantity                                        
Idli Rice                                                           : 1 cup
Moong Dhal                                                    : 1/4 cup
Toor Dhal                                                        : 1/4 cup
Channa Dal                                                     : 1/4 cup
Hing - a pinch
Red Chillies                                                     : 2
Ginger                                                              : 1 small cube
Coriander leaves (finely chopped)
Sesame seeds                                                   : 2-3 tsp
Salt  - to taste
Oil - 1 tsp

For the coconut spread
Grated fresh coconut                                     : 3 tsp
Chilli powder                                                   : 1/2 tsp
Curry leaves                                                     : a few

Preparation method:                                                                                            
  • Wash rice and all the dals properly such you can use the water they are soaked in while grinding. 
  • Soak rice and all dals for about 5-6 hours. 
  • Grind all the dals, rice to coarse paste by adding ginger and red chillies to it. Use the water in which they are soaked to grind, add water only if required.The consistency of the batter should be slightly thicker than the dosa batter. 
  • In a pan, mix the dosa batter,chopped coriander leaves,hing, a pinch of sugar and salt.Mix very well. 
  • Keep aside for half an hour. 
  • Mean while in a pan, heat 1/2 tbsp ofoil, splutter mustard seeds,add curry leaves, saute and then add 1/2 tsp of read chilli powder and the grated coconut.Mix well and saute for 5 -8 mins. 
  • Remove from flame and keep aside. 
  • Now heat non-stick dosa pan, drizzle few drops of oil on it, pour a laddle full of batter and just spread it to make small dosas of the size of a puri, dont spread it like normal dosa. 
  • Sprinkle few sesame seeds on top of it and when the set dosa turns slighlty brown from one side,turn to the other side and  cook till the other side also turns slightly brown.
Before serving the dosa, sprinkle the roasted cocunut on top of it and serve with coconut chutney or sambhar.
