Summer vacations, the best part of the year for any kid has finally arrived and I am sure every kid looks forward to it, be it for the sheer excitement of traveling to wonderful vacation getaways to chill out or to visit hometowns, spending quality time with family or just to be at home without being worried about studies, routines etc.
Although my son is too young to understand the importance of summer vacation in a kids/students life, yet few days back,when I told him that just few mores days to go for the vacation to ring in and the list of things he can do,he listened very attentively and was so happy to know that during vacations he need not sleep or wake up on time, can watch TV and play with his little sister and friends for as long as he wish to, that he does not have to follow a fixed routine....

And for me its a period where in I want to ensure that my kids spend their summer days in a qualitative way by keeping them busy with some or the other fun filled activities. Apart from having planned out few activities for them, I have also decided to experiment with the food items they love to have, in such a way that the recipes would be healthy and nutritious enough to keep them energized through out the day at the same time they enjoy every bit of what is served to them.

I thought why not to start the vacation delicacies journey with something sweet as my kids have a fetish for sweets but I also wanted the dish to be healthy enough and hence prepared "Apple Jalebi", which I happened to see in a magazine long back but never bothered to make it then but now has a reason to give it a try.
 

Typical Apple jalebis are batter coated fried apple rings, dipped in the fragrant saffron sugar syrup but I have used only 1/2 cup of sugar syrup to dip the jalebis and then have brushed the jalebis with honey so as to avoid intake of too much of sugar and I must say my kids loved it to the core and I was happy that they were indirectly having the fruit that I have to force them to eat.
 
So here it goes..Please do try it, I am sure every kid would love them or anyone who has got a sweet tooth as well.

Prep & Cook time : 1hour


Ingredients                                                            Quantity                                 
Apples                                                                         : 2
Plain flour/Maida                                                     : 3/4 cup
Bengal gram/Besan                                                  : 2-3 tsp
Sour Yogurt/Curd                                                     : 4-5 tsp
Sugar                                                                            : 1/2 tsp
Baking soda                                                                : a pinch
Saffron                                                                         : few strands
Oil for frying
For the Syrup: 
Sugar                                                                           : 1/4 cup
water                                                                           : 1/2 cup
Cardamom powder                                                  : 1 tsp
Lemon juice                                                               : 1/4 tsp
For Garnishing:
Chopped nuts
 

 Preparation Method :                                                                                        

For the Batter:
  • In a large bowl mix together, the flours,curd,soda and saffron to make a smooth batter. The consistency should be like idli batter.Add few spoons of water only if required. 
  • Keep aside for just an hour and not more than that.The batter should be fermented.
Syrup:
  • Boil the sugar and water together. Add cardamom powder and boil for about 10-15 minutes till it reaches syrup consistency and now add the lemon juice to it. Boil for another 1 minute.
 Preparing the apple rings:
  • Heat oil or ghee in a pan.
  • Core and slice the apple into 6-7 thin rings. 
  • Dip apple rings in the prepared batter an fry till golden brown. 
  • Soak the the fried jalebis in hot sugar syrup for a minute .Strain and garnish with nuts.
If required pour some honey over the Jalebis for making them more sweet and serve hot.
