Falooda is a all time favourite cold beverage in our home, I prepare Falooda using either rose syrup or strawberry as I love the colour these two ingredients impart in Falooda.Its a sweet beverage made by mixing many ingredients such as syrup, vermicelli, jelly, basil seeds(Sabza),milk,ice cream of any flavour.
Its said that Falooda originated from Persia and was bought to India during Mughal period.The vermicelli used in Falooda was originally prepared using arrowroot powder but in India, either wheat or cornflour is used to prepare the same.
I have used strawberry syrup as the base but one can use any flavoured syrup such as kesar, rose, chocolate or mango as the base. Now a days you can even find readily-dried falooda in the market,which can be used to prepare falooda in minutes.
Do try this sweet and refreshing beverage as its not something to be missed in Summer.

Ingredients Quantity
chilled milk : 2 cups
Honey/Sugar : 2-3 tbsp
Falooda sev/Vermicelli : 3 tbsp
Pre-soaked sabza(garden cress seeds) : 2-3 tbsp
Butter scotch ice-cream : 2 scoops
For Garnishing
Strawberry jelly : 2 tbsp
Preparation Method:
- Boil water and cook the sev(vermicelli), strain and keep aside. If you are using falooda sev, then soak it in water for 10-15 mins and strain.
- Soak the sabza or garden cress seeds in a bowl of water for 5 mins, strain it once they change its texture to translucent.
- Mix sugar or honey to the chilled milk and keep aside.
- In a glass, first pour 2 tbsp strawberry syrup as the base,top with 1 tsp of garden cress seeds and 1 tbsp of falooda sev.
- Now pour 1 cup of milk over it very gently such that the milk does not disturb the syrup.
- While pouring the milk, you would see that the sabza and the sev/noodles would start floating on the top.
- Finally top with a scoop of butter scotch ice cream and garnish with strawberry jelly.
Tips:
- You can freeze the syrup poured at the bottom of the glass for 5-10 minutes before pouring the milk so the syrup does not get mixed with the milk.
