Gobi Paratha


Gobi Pratha
At times I find it so difficult to make my kids have vegetables, that I prefer making stuffed parathas(using different vegetables) for them instead and it works as they love having parathas as a roll.

Any kind off stuffed paratha is one of best way to start the day on a healthy note, as its a combination of fiber, Vitamins, calcium etc depending upon which vegetable you choose for making the stuffing.

I had some cauliflower and cabbage, so made the parathas using both instead of making just Cauliflower/Gobi paratha which is most preferred one in North India. I have grated both the vegetables (Cauliflower and cabbage) and cooked with onion masala to make the stuffing for parathas.It is sure shot a very satisfying dish and can be had for either breakfast, lunch or Dinner.

Stuffed Parathas are best option to go for on a lazy and tiring day when one don't feel like making an elaborate meal as it can be had with curd or achaar or any chutney.






Ingredients                                               Quantity                                                 
For the stuffing
Grated cauliflower                                                       :1 cup
Grated Cabbage                                                             :1 Cup
Finely chopped onions(Ulli/Pyaaz)                        :1/2 cup
Chopped Green chillies(Mullag/Mirchi)                :1/2 tsp
Sesame Seeds(Ella/safed Til)                                   :1 tsp
Roasted cumin seeds(jeerakam/Jeera                     :1/2 tsp
Turmeric powder(Haldi)                                             : 1/4 tsp
Hing/Astofedia(Kayam)                                            : a pinch
Garam masala                                                                  : 1/2 tsp
Chopped fresh coriander(dhania/Malli ella           : 2-3 tsp
salt to taste
oil/Ghee

For the dough
Whole wheat flour(gehun ka atta)                       : 1 cup
Oats                                                                               : 1/2 cup
salt to taste

Preparation Method:                                                                                           

For the dough :
  • Roast the Oats for 5-10 mins till it leaves a nutty aroma.Keep aside and let it cool.
  • Once cooled, grind it to fine powder,In a pan, add the wheat flour,powder oats,salt and mix well.
  • Using enough water, knead it into a soft dough.Keep Keep aside.
For the stuffing:
  • Heat 1 tsp of oil in a pan and crackle the sesame and cumin seeds.
  • Add the onions and green chillies and saute again for 1/2 a minute.Add the turmeric and mix well.
  • Add the grated cauliflower, cabbage and salt and saute for another 5-10 minutes.
  • Let it cook, if required, sprinkle a little water and keep stirring until cooked.Be Careful to not add too much of water lest the ingredient turn mushy, just sprinkle water.
  • Add the chopped coriander and mix well.
  • Now Divide the dough into 7-8 equal portions and keep aside.
How to make paratha :
  • Flour the surface and roll out the dough slightly thicker into a small circle.
  • Now place 1-2 tsp of the Gobi/cabbage stuffing at the centre and gather all the sides of the paratha and bring them together to the centre and seal tightly.
  • Flatten it slightly from the centre using your palms and roll out again very gently into a circle of 5" to 6" in diameter. Use whole wheat in between for dusting, while rolling out so that it does not stick and also care should be taken that the stuffing should not ooze out of the chappati/circle.
  • Heat a chappati tava/griddle and transfer the paratha gently to the tava, drizzle little oil(use ghee/butter for kids) and cook on both side till both side are golden  brown.
  • Prepare the remaining parathas in the same manner.
  • Serve hot with curd, raita , chutney or any curry.
