Angoori Paneer Tikka

Angoori Paneer Tikka
Angoori Paneer Tikka, is one of the yummiest starters made up off Paneer/Cottage cheese.
And paneer being an all time favourite party ingredient, this tangy black grapes sauce sandwiched between paneer slices, skewered and roasted, sure can be served as a unique starter for any party.

 
My kids love paneer in any form, and so do one of my lovely niece V, whenever I make any dish using paneer, It reminds me of her. I am sure she will love this one as well.
So this one is for her and for all the people who love paneer... Here it goes.
Ingredients                                                 Quantity                                                    
For Grape Sauce:
Chopped fresh black grapes                           : 1 cup
Chopped fresh Green grapes                         : 1 cup(optional)
Grated jaggery                                                  : 2 spoon

Lemon juice                                                       : 1 spoon
Cumin seeds                                                     : 1tsp
Black salt
Salt
Oil


For Paneer Tikka:
Cottage cheese                                                    :  300 grams paneer block(cottage cheese) 
Tomato diced( 1 inch square pieces)              :  2
Green bell pepper diced( 1 inch square pieces)  : 2 small

Gram flour(besan/Kadala maav)                  : 1/2 Cup
Hung curd                                                          : 50 gm
Ginger Garlic paste                                          : 1/2 tsp
Haldi/Turmeric powder                                             :1/4 tsp
Dhaniya/Coriander powder                           : 1/4 tsp
Yellow chilly powder                                        :1/4 tsp
Fresh Cream                                                      : 2 tbsp
Chat masala                                                       : 2 tsp
Spoon amchoor(dry mango powder)             : 1/4 tea
Ghee(clarified butter)                                      : 1 tsp
Toothpicks/Small bamboo skewers              : 8-10
Salt
Oil

Preparation Method :                                                                                              

For grape sauce/chutney:
  • Heat 1 tsp of oil in a wok/kadai, add cumin seeds and saute for 4-5 mins, add chopped black grapes and sautĂ© until they become soft.
  • Add salt/black salt and jaggery  and cook till consistency is thick, remove from flame and add lemon juice and chat masala, let it cool.
  • Grind the sauce to a semi solid paste.
To make the paneer tikka :

  • Heat ghee in a pan and roast gram flour in it till light brown.
  • Add roasted gram flour in curd and mix well, ensure there are no lumps, now add fresh cream, all the masalas(chili, turmeric and coriander powder), Ginger Garlic paste, amchoor powder and salt, mix all the ingredients very well to form a batter.
  • Add few spoons of milk to the batter to dilute it, if required.
  • Cut the cottage cheese/paneer cube into 1 inch thick slices.
  • Sprinkle little salt and chat masala evenly over them.
  •  Cut each paneer cube from the centre and fill it with 1/2 - 1tsp of grape sauce/chutney.
  •  Take either a skewer or toothpick, thread one bell pepper, then gently thread a paneer cube with grape chutney sandwiched in between and at end thread a tomato piece. Prepare some 8-10 such pieces and keep aside.
  • Marinate each one of them in the prepared marinade by dipping or by pouring 1-2 tsp of besan batter on them.
  •  Heat 2-3 tsp of oil in a pan. Place these skewers on the hot pan and cook till golden brown on all sides or roast in tandoor till light brown from outside.

Serve hot with black grape sauce

Note: One can even use green grapes to make the grape chutney or sauce.
