Paneer bhurji

I love all the dishes made up of "Paneer - Cottage cheese" especially 'Paneer bhurji'. Its been sometime that I haven't prepared any dish using paneer . It is used in a variety of dishes in Indian kitchen, be as starters or in main course. One can make paneer at home by adding curd to milk so as to make it curdle.

Paneer bhurji is made up of crambled paneer(cottage cheese) and its the simplest dish that can be made up of this wonderful and health stuff that goes very well with puris, chapatis or naan. I wish my lovely niece Varsha was here to try this as she too loves paneer.

                             
Ingredients                                                       Quantity                                       
  • Paneer or cottage cheese                            : 250 gms
  • Onions  chopped                                           : 1 small 
  • Tomatoes chopped                                       : 1 medium sized
  • Turmeric powder                                          : 1/4 tsp
  • Garam masala powder                               : 1/4 tsp
  • Green chillies chopped                                : 1
  • Cashew nut paste                                         : 2 tsp
  • Milk                                                                   : 1/2 cup
  • Oil                                                                       : 1 tsp
  • Salt as per taste
Preparation Method:                                                                                          
  • Scramble the paneer/cottage cheese and keep aside.
  • In a kadai or wok, heat 1 tsp oil, splutter mustard seeds, add chopped onions, chillies. Saute for 2-3 mins on medium flame.
  • Let the onions turn light brown and add turmeric and chilli powder and green peas, mix well
  • Now add the chopped tomatoes and saute 3-4 mins till peas get cooked.
  • Add the scrambled paneer and salt as per taste, toss all the ingredients well.
  • Now all the cashew nut paste and the gram masala and 1/2 cup of milk.
  • Mix well and cook on medium flame for few seconds,by stirring continously, so that paneer does not stick to the bottom of pan.
  • Cover it with a lid and cook for another 2 mins
  • Cook till oil separates out from mixture.
  • Garnish with coriander leaves .
  • Serve hot with chapatis, naan or puris.

    1. Thanks Reema, Paneer is a good source of calcium and there are loads of dishes one can prepare using it.. Will post more paneer dishes.
