Rava Puttu/ Steamed Semolina cake

I am sure anyone who is friends with a Malayalee would have either heard about "Kerala Puttu" or must have had it atleast once, as its part and parcel of a every Malayali's breakfast menu.We keralites just can't think of Breakfast menu without "Puttu".

"Puttu or steamed cake", is a very simple , easy to prepare comfort food for us.The most common and traditional version of puttu is made up of rice,but we have a liking for Rava puttu over rice puttu. Rava puttu tastes as delicious and is as wholesome as Rice puttu or wheat puttu. Oh yes Puttu can be made with Rice, Rava, wheat, ragi etc.

When I started cooking after marriage, I always looked for easy and simple dishes that can be prepared with out much preparation, thats when I learnt how to prepare "Puttu" from Amma. And my initial trial with rice was always disastrous as I never got the right amount of water to be used to moist/wet the powder. But after few attempts, I mastered it and then shifted to Rava puttu which I got to taste at one of my friends place and liked it instantly and it thus became part of our breakfast menu.

Wet flour
Ingredients                                                     Quantity                                     

Rava/Sooji/Semolina                                         : 1 cup
Grated Coconut                                                   : 1/2 cup
Salt to taste
Puttu mould
Water
 
Preparation Method:                                                                                              
  • Roast the Rava/Sooji/Semolina, till it turns slightly light brown. Care should be taken not to burn it.Keep it aside to cool down.
  • Add salt to the roasted Rava and mix well.
  • Mix the flour by sprinkling water little by little and mixing it simultaneously.Keep repeating this till Rava/flour gets properly moistened/Wet.
  • (Note: You don't have to pour water into the flour, as we do while preparing the dough for making chapati instead just sprinkle water.)
  • Place the cooker filled half with water on the stove without the whistle. Let the water to boil.
  • Fill the Puttu mould with 1 tbsp of fresh grated coconut then 5-6 tbsp of wet rava then again 1tsp of coconut. Repeat till the mould is filled. The mould should not be tightly packed. Everything should be filled loosely, don't press the content into the mould after filling.
  • Cover the mould with the lid and place the Puttu kutti or Puttu mould on the nossle of the Cooker. let it cook on medium flame till 8-10 minutes, one should get to see steam coming out of the mould.
Once done serve it hot with Kadala curry or Banana.

Notes:                                                                                                                         
  • Its sureshot a very healthy dish to start the day with as its a completely steamed. Diabetic people can prepare this by using less coconut and can have it with Kadala/Black chana curry .
  •  You can buy the Puttu mould or Puttu Kutti from any Utensil shop which sells Kerala utensils.
