Kerala vegetable stew


Kerala vegetable stew is a mixed vegetable curry in coconut milk. It  goes hand in hand with Kerala appams or chappati. Its an amalgam of all fresh vegetables and hence its a very healthy and delicious dish and if had for breakfast along with appams , provides all that our body needs to start the day on a healthy note.

One can add vegetables such as Carrot, Potato,Onion, green peas and french beans. You can prepare this even if one of the above ingredents is not available.

Use fresh coconut to extract milk, to use as gravy for the dish.


Serves : 3  

Ingredients                                               Quantity                                          

Potato                                                                : 1 (cubed)
Carrot                                                                : 1/4 cup
Green Peas                                                        : 1/4 cup

Onion chopped                                                 : 1 medium sized
Ginger crushed                                                 : 1tsp

Green chilly                                                      : 1-2
Black pepper crushed                                        :1/2 tsp

For Gravy :
Thick first milk extract                                 : 3/4 cup
Thin second coconut milk extract              : 1 and 1/2 cups 
Curry leaves                                                    : A few
Salt                                                                   

Coconut oil

Preparation Method:                                                                                           

  • Pressure cook the Patatos for 2-3 whistles. Peel and chop it in small cube shape.
  • In a pan, heat 1/2 tsp oil, splutter the crushed black pepper, curry leaves, ginger and green chilly. Saute for a min or so.
  • Add the onions and saute for another 2-3 mins.No need to fry the onions till turns brown. Add the chopped vegetables and mix well. Add the thin extract of coconut milk and  salt ,cook the vegetables on low flame till they get tender. It would 10 -12 mins approx. Add few more curry leaves to it.
  • Now add the thick coconut gravy and cook for few minutes by constantly stirring it so the coconut milk does not curdle.
  • Remove from the flame.     
  • Serve hot with Kerala Appam or Roti.
