AVIYAL (mixed vegetable in coconut gravy)



 Aviyal is a traditional kerala mixed vegetable dish in cocunut gravy .Kerala sadya can't go without it. Its very healthy and nutritious. This dish is a superb concoction of all the nutritious veggies, we mothers wish our kids should have daily as part of their meal. Also its non spicy and good for stomach. The best part about aviyal is one can use any vegetables but the main ingredients of Kerala avail are as below:

Raw Plantain(Ethakka)                                                : 1
Elephant foot/ Yam(Chena)                                      : 100 grams             
DrumstickMuringakkai)                                              :  2 (1 would suffice  but used 2 as  my kids love it)
French beans                                                                     : 6-7
Carrot                                                                                  : 1
Potato (Uralakizhangu)                                                : 2
Snake gourd(padavalenga)                                          : 150 gms
Cucumber or White pumpkin                                      : 100 gms
Long string beans(Payar)                                               : 50 gms
Green chillies                                                                    : 1 or 2

For gravy :

Grated Cocunut                                                             :  1-2 cups ( This would depend upon the quatity of vegetable being used.)
Onion                                                                               : 1
Cummin seed                                                                  : 10 gms (a must)

For seasoning:
Curry leaves                                                                  : 1 string
Cocunut oil                                                                     : 1-2 tbsp
Sour curd/tamarind juice                                      : 1-2 tbsp
Salt                                                                                 :  As per taste

Preparation method:                                                                                                                  

  • Peel the skin of all vegetable (except white pumpkin,french beans, long string beans and Snake gourd) and cut them into 2 inch long pieces.
    Note: My mom says that the beauty of avial is all the vegetables cut in same size.
  • Take a pan, add half a cup water, yam/elephant foot, turmeric and salt and cook the Yam/Elephant seperately for 5 mins to remove the itching caused by the yam. Just cook it but don't over cook it. strain it and keep aside.
  • Coarsely grind grated coconut,cummin seed, chopped onion,and green chilly. Keep it aside.
  • Take a pan big enough to put all the vegetables and add 1 cup of water, turmeric, add potato, carrot and drum stick, cook them for 5-10 mins, when they are half cooked add white pumpkin,french beans, long string beans ,Snake gourd, curry leaves, salt, mix it well
  • Cook it for another 5-10 mins so that all the vegetables get properly cooked but be careful it should not turn mushy.
  • Add the the coconut paste and coconut oil and cook it for 5 mins more.Remove from stove.
  • Add curd and mix well. Cover it with a lid so that the Aviyal soaks the aroma of coconut oil and curry leaves.
Serve it hot with rice . It tastes delicious rather weliciousdelicious !!!!!!!!!!!!
